For the month of September I have been mostly following the Blogilates Sweatember Workout Calendar, it’s been hard work but enjoyable.

Curry with cauliflower rice

As part of the workout plan it is suggested that you eat clean, which I mostly ignored. It seems to be lots of lean proteins and broccoli 😉 However I did look at some of the recipes out there and a couple appealed, including this Cauliflower rice.

I had also by pure chance bought the worlds largest cauliflower and was desperately (and still am) trying to find exciting recipes to use it that don’t include the obvious Cauliflower Cheese.

My first thought was Cauliflower curry, which is always amazing, but once that was made, what next? That’s when I stumbled on the clean eating recipe for Cauliflower rice.

I have to admit I was a little apprehensive about how rice like it would be, and whether it would taste obviously of cauliflower. However as a rice substitute with curry this was unlikely to be a problem.

It was actually really easy to make, super quick, healthy and very tasty – which is the perfect combination in my book.

You basically add cauliflower florets to a food processor and pulse to a rice like consistency. I didn’t measure it, but I basically filled my food processor and it made enough for around 4 people.

You then put the cauliflower into a microwaveable dish and cover with clingfilm. After cooking on high for 3 minutes fluff it up with a fork and your Cauliflower rice is done!

Once I had started eating my dinner I almost completely forgot it wasn’t rice. I will definitely make this again as it’s perfect for people on a low-carb diet, or those who feel guilty about eating rice and naan with their curry like me!

This recipe surprised me enough to make me think about other “clean” recipes I had avoided, it particular the cauliflower crust pizza. Maybe I’ll make that this week with the last of the cauliflower!
